Birthday Risotto


I made this a few weeks ago, and Rugrat liked it so much he asked for seconds! And when I asked him what he wanted for his birthday dinner this year, this is what he chose. :) Risotto only seems difficult if you've never made it before. And this version is fancy enough to serve at a dinner party (although maybe I'd use fresh asparagus instead of frozen peas, in that case).

Birthday Risotto
2 Tbsp EVOO
1 Tbsp butter
1 small onion, diced
1 c arborio rice
1/2 c dry white wine
4-5 c chicken stock
1 c tiny bay shrimp
3/4 c frozen peas
1 c shredded parmesan cheese
1 tsp white truffle oil
salt & pepper

Put the chicken stock in a pot over medium-high heat until it's simmering, then reduce temperature to maintain a simmer. Meanwhile, in a large, heavy-bottomed pan, heat the olive oil and butter over medium heat. Add the diced onion, season with salt & pepper, and saute for about 7-8 minutes, until the onion is soft and translucent. Add the rice, stirring to coat all the grains in the oil/butter, and turn the heat down just a smidge, to medium-low. After a minute or so, add the wine. When the wine is nearly all absorbed, add 1/2 - 1 cup of the simmering chicken stock. Stir frequently, until the chicken stock is nearly all absorbed. You'll know it's time to add more stock when you run your spoon along the bottom of the pan and you can see the bottom of the pan for a split second before the liquid rolls back over it. Keep adding stock, about a cup at a time, stirring frequently, until you've got about a cup of stock left in your pot. Taste the rice, and if it is still very raw, you'll want to add a bit more chicken stock to your simmering pot, because one more cup won't be enough. It takes me about 25-30 minutes to cook the rice. (One more way to tell if your rice is almost done: it starts absorbing the liquid MUCH slower -- your last addition of stock seems to take forever to absorb.) When the rice is al dente, throw in the shrimp & frozen peas. Let the risotto get hot again, turn off the heat, and then add your parmesan cheese. Finish with a drizzle of the white truffle oil.

Last night

While doing the dishes, Rugrat decided to regale us all with a joke. And it began, "Once there was this guy with no belly button, but he had one goooooolden nut..."

(After we picked ourselves up off the floor and stopped laughing our asses off, we finally found out that he was referring to a machine nut, as in "nuts & bolts.")

Earlier in the evening, I overheard this exchange while the kids were playing Guitar Hero: "How come you rock so much?" Heh.

Mr Wonderful and I are truly enjoying these fleeting moments before they become full-fledged teenagers in a couple of years. They are just so much fun right now.

Greetings from low-carb land

The last couple of weeks have been a whirlwind of back-to-school prep, board meetings, PTA volunteer duties and all kinds of things. Rugrat started back to school last week, and he's already had a clash with his new teacher. Big surprise. The kid is nothing if not strong-willed, and when the teacher asked the class to lay out their math homework a certain way, he decided that HIS way was better because it used less paper. And proceeded to argue the point with the teacher. So we had a little phone conference yesterday, and of course Babydaddy and I hammered the point home that following instructions is just as important as getting the correct answers. I love my son like crazy, but honestly that kid is not an easy one to live with sometimes.

I'm editing the monthly PTA newsletter this year, as a way to stay more in touch with what's going on at Rugrat's school, and because it was something I could do from the couch. You know how I am about my couch. LOVE it. Anyway, this is a bit of an adventure; there's lots of people involved in submitting articles, reviewing the draft of the newsletter, and sending me changes. There are a few people who (I have been warned) are consistently difficult to deal with: late submitting articles, etc. I've laid down the line in the sand though; I have said that I can work on this on weekends only since I have a full-time job, and if the principal of the school doesn't get me her article on time, oh well. The world won't stop turning.

I am also on the board of a new project that my supervisor at work is starting up: Classes for Causes. The basic premise is that people will teach classes, and the proceeds from those classes will be donated to the charity of the teacher's choice. The site is currently in development but we will be rolling out the beta version very soon, because we're planning to have our pilot class at the end of October. Supervisor is holding the first class: Search Engine Optimization and Internet Marketing. I am considering teaching classes in knitting and creating your own cell phone ringtones. Mr Wonderful is even getting in on the act; he'll be teaching a course in self-defense. Anyway, we've had two board meetings so far, and as the Board Secretary, I am responsible for typing up the minutes. Which took like an hour and a half last night, because we had a three-hour Strategic Planning meeting on Tuesday. My eyes were BURNING by the time I shut down the computer.

And things have been crazy busy at work. I'm desperately trying to get on top of things, but there is just SO much right now. So I'm working like a demon, trying to get done by the end of the day, so I can pick up Rugrat or go to the gym and fix dinner.

Speaking of dinner, Mr Wonderful and I have started the South Beach diet. Essentially it's a low carb diet for the first two weeks (meat, veggies and lowfat dairy only), then you add in complex carbs (whole grains, fruit) for the second phase. We started the diet on Monday, which was interesting because we were gone all day - since it was Labor Day and we both had the day off (joy!) we took a day trip to the coast. A nice drive through Sebastopol and Guerneville, out to where the Russian River dumps out. We saw a bunch of seals frolicking in the water, skipped rocks in the river, watched the pelicans dive for fish, saw a paraglider (is that a word?) jump off a cliff and float down to the beach, and ate crunchy veggies with a vegetable/ricotta dip.

Phase one hasn't been that bad, actually, although I do miss Dr Pepper and chips. Crunchy salty things are my downfall, and I've been missing the faux-cheese flavored snacky foods. But we've stuck to the plan (on day five now!) and have each lost five pounds already. We took measurements (waist, chest, hips & thighs) at the beginning and will compare when we take measurements again at the end of phase one. I'm pretty excited about this; I didn't think I'd lose weight this fast, and it's a great incentive to keep going. I doubt it will continue falling off at this rate (it must be mostly water weight, right?), but it's great to have some validation.

But man, I would LOVE to have a piece of fruit right now. I can't believe how much I am craving fruit these days, now that I know I can't have it.

Technobabble

Rugrat has been bugging me for a while now to teach him how to "build a website." I tried explaining that people study for years to learn how to build websites, and that it's not something he can just sit down and learn in an afternoon. But he just kept on bugging me.

So, today I built him a very, very simple website, while I talked him through the whole process. I showed him where to put text, how to add an image or a link, and how to build a table for layout. Since I'm a programmer, I showed him how to do all this by writing the code, not with some silly little point and click "web builder" software. We also created a simple background image to use on his site, and then created links to other pages. So it was a pretty thorough introduction to web developing.

And as if that's not enough, I set him up with a Gmail account and pointed him in the direction of Blogger. He figured that out all by himself (it really is foolproof), and set up a blog called Lizze's News (Lizze is his pet lizard's name). Growing up

Rugrat's last day of school is today. The end of third grade!

He's been really impressing me lately. First of all, he hasn't lost his housekey yet. He's been working hard on his goals - remembering to bring all his stuff home from school, taking care of his responsibilities at home (homework, cleaning his lizard's cage at Babydaddy's house, etc). He's walked to school several times by himself (Babydaddy followed him the first couple of times just to be sure). And....he finally learned how to ride his bike.

I've tried a few times to teach him to ride his bike, but he was very resistant to even trying. However, I made this a prerequisite to him being able to be a latchkey kid next school year; I'd rather have him be able to ride his bike to/from school than just walk. So a few weeks ago, Mr Wonderful took him out in our court and taught him how to ride. It took him less than 20 minutes before Rugrat was riding his bike completely solo (including starting off and stopping without falling over). I was absolutely flabbergasted. It helps that Mr Wonderful is a lot stronger than I am, and that learning to ride the bike felt more secure and less wobbly while he was holding the back of the seat. But I think Rugrat was finally just ready to learn. Now, of course, he LOVES riding his bike. He couldn't see what the big deal was before, but once he learned how to do it, he couldn't believe how fun it was. And I had nearly given up on him ever learning to ride a bike, so when I saw him take off for the first time, completely on his own, I almost started crying. My little munchkin is growing up!

This is such a golden age of childhood, and it makes me especially excited about our upcoming camping trip. I've taken Rugrat camping before, but only once, for a single night, and it was a few years ago. I think this is going to be one of those vacations that he remembers for the rest of his life. We'll have three adjoining campsites: my sister & her family, my cousin & her son, and Mr Wonderful, Rugrat and I (unfortunately, Tomboy is not able to join us this time). It'll be five days of getting dirty, hiking, swimming in a river, fishing, and playing with his two cousins that are just about the same age as him. I've gotten a separate tent just for the boys to sleep in, and I really think they're going to have a blast. S'mores around the campfire at night, hot cocoa with marshmallows in the mornings, and long summer days playing in the woods and the river with his favorite cousins. What could be better for a nine-year-old boy?

Sweater is DONE!


Finally. Finally, finally, finally, the damn sweater is off my needles.

Saturday I frantically knitted up the ribbing on the neckline, after completely screwing it up Friday night (beer + knitting apparently equals forgetting how to do knit-one-purl-one ribbing. *sigh*). We took the kids to a free church-sponsored Easter event in the next town over, and I have to say, that was the most AMAZING thing I'd ever seen. There were more than 20 bounce houses (I think they must have rented every single one in the area), a laser tag game, a rock climbing wall, easter egg hunt, hotdogs and drinks and people driving around in golf carts throwing out candy...and the whole thing was free. Every single bit of it. They must have spent thousands and thousands of dollars on this shindig. Anyway, while Rugrat was waiting in line for the laser tag, I knitted the neckline. Afterwards, we went to Tomboy's piano recital, where I finished the sweater by weaving in all the ends. And Saturday night I washed and blocked the sweater. Sunday morning it was dry and ready to go, and I achieved my goal (well, my latest goal) of finishing the sweater in time for Easter.

As you can see, the sweater is a *bit* big. The neckline in particular is huge, but the sleeves are also a little too long and the shoulders are definitely too wide. That's OK. Turns out I'm fine with that, because now he'll be able to wear it for a couple of years, probably. And he is incredibly proud and excited - he kept telling everybody we saw that his mom made the sweater just for him, and he's the only person in the world who has a sweater like that. He wore it all day on Easter and put it on over a t-shirt to wear to school today, as well. And you know what? That's just fine with me. :)

A sleeve is done!

Finally! I finally finished one sleeve. Rugrat saw a kid wearing a sweater that had little holes for the kid's thumbs to poke through, and of course he had to have that for HIS sweater, so I made a buttonhole after carefully marking where his thumb would be.

So now all I have to do is one more sleeve, the collar, and weave in all those pesky yarn ends...and we'll have a sweater!

Today's the day!

Or, rather, tonight's the night. Rugrat has decided that he wants to dress up this time...as a Death Eater. Heh. Yeah, that's pretty standard for him. I think we're going to have to hit a party store or something for some costume materials this afternoon/evening. He really needs a black hooded cloak to pull off the costume, and Mr Wonderful suggested that we get a mask and spray paint it silver (as opposed to just using the "mask" Rugrat made out of tinfoil taped to a pair of sunglasses).

The bookstore party starts at 7 PM, and Rugrat is so excited to be allowed to stay up until midnight (without being forced to take a nap in the afternoon). Whereas I am just excited to get my hands on the book I've been eagerly anticipating for several years now.

Rugrat got his blue belt in karate class yesterday. This is kind of a big deal; it's the last of the "beginner" belts. It's probably also the last belt he'll get for a while, as we haven't figured out if we're going to enroll him in karate out in WC yet or not, and if we are, where we'll take him.

Even more awesome? The fact that Rugrat asked me this morning to explain the fourth dimension to him, and I showed him this website. (Yes, I already had it bookmarked. Because I am a total geek and this is the kind of shit that makes my cold little heart go pitter-pat.) WTF is an eight year old doing asking questions about the fourth dimension? Damn, my kid is smart.

Cranky

Stupid birth control pills. I was off them for about a year, so I totally forgot about this. I don't get pre-menstrual syndrome; I get post-menstrual syndrome. I become a bitch the week after my period. *sigh*

Yesterday Rugrat and I got. Into. It. And it was mostly because I was just being all on-edge and bitchy. He was pushing my buttons, sure. But that's par for the course. I was kind of overreacting, so then he started whining and bitching. And saying the same thing over and over and over in that freaking voice that drills into my brain and makes me insane. I kept telling him to stop it, and finally I just told him to shut up. And he HIT ME! (Not that hard, on the arm, but still.) Oh, hell no. That shit does NOT fly with me. So after I beat him to a pulp (just kidding. But I had very stern words with him) we came home and he pouted. And stomped around. And gave me stinkeye all evening, until I made him take a shower. As he was getting in, I was reminding him to clean all his "bits": "Don't forget to clean between your toes!" "I know." "Don't forget to clean your pits!" "I know, mom!" And then, in a burst of inspiration, I brought back the "No" game: "Doooooooon't smile at me." (Corners of his mouth twitch.) "Dooooooon't you do it! Don't you smile at me!" (He can't help himself now, the mouth is smiling all on its own, no matter how angry he still is at me.) "I don't want to see you smiling! No smiling, you hear me?" (Total full-on grin.)

Yeah, I still got it. ;-)

Weekend notes

This weekend I got a bug up my butt about the yard. On Saturday, I spent five (!!) hours outside - weeding, putting down bark, cutting off dead leaves from the elephant ear plant thing near the front door (which left no leaves at all; we'll see if it survives), planting stuff in the pots in the backyard, and cutting back the fuschias on the other side of the front door that were also doing quite poorly thanks to the hard freeze we had a few weeks ago. On Sunday I had someone come out to dethatch and aerate the front lawn, and they will be reseeding it today. So at least the front yard will look presentable in a few weeks. I'm also definitely getting a gardening service, because God knows I don't mow often enough (or fertilize, or weed, or anything).

As a result of working my butt off on Saturday, I was pretty sore yesterday. But I dragged Rugrat out to get some new clothes (pants are a particular issue with him, as we have a hard time finding jeans that fit the length while still being small enough in the waist to fit his skinny bod), and to the grocery store. Rugrat's friend K came over for a little while to play, and when I told the kids that it was time for her to go home, Rugrat shouted "Oh, shit!" He is EIGHT. That is way too young to be cursing at the top of your lungs. Soooo...to punish him I made him not speak for an hour (and if you know my Rugrat, you know that this is very difficult for him, since he's a major chatterbox). I told him if I heard him curse again, he'd be getting his mouth washed out with soap. Of course it doesn't help that I'm a complete hypocrite and curse fairly often myself; when he brought this up I told him that when he is twenty-five years older than someone (as I am older than him) he can curse all he wants. Heh.

The weekend ended on a good note though, as we made homemade veggie pizza for dinner last night. I bought one of those thin-crust pizza shells, and we filled it with ranch dressing (instead of marinara, because neither of us like tomato sauce on our pizza), baby spinach, mushrooms, olives, marinated artichoke hearts, slivers of onion, garlic, and standard bagged "pizza mix" shredded cheese. Rugrat's side only had spinach & olives, but my side had all the goodies. And BOY was it good! It earned one and a half thumbs up from the Rugrat, although he said that next time he'd prefer it without the ranch dressing.

Old Skool

I found an old friend on myspace a couple weeks ago - a guy I haven't talked to in ten years. Turns out he lives only half an hour away from me, and also has an 8-yr-old child. We've talked on the phone a couple times but haven't yet gotten together; it will be interesting to see him after all this time. He was a really great friend to me back when I was young and stupid and in a very self-destructive phase, so I'm really looking forward to seeing him again.

I found the high-end yarn shop in WC this weekend, and spent a good hour and a half in there, browsing the gorgeous yarns and finally settling on some skeins of lovely brown and olive-green wool to knit my first sweater. I also got a set of double-pointed needles and a circular needle, and I'm off & running on the project. I hope it turns out OK; this is my first non-scarf project so I'm hoping I don't screw it up too badly. It's about an inch long right now, so I figure I might be done with it by next Christmas. Heh. Unless, of course, it goes the way of my counted cross-stitch project (the stocking that will probably not be finished until my first grandchild is born).

Rugrat is losing teeth left, right & center. He's almost got more gaps than teeth, these days. Doesn't do much to help his babyish pronunciation either. ;-) He's doing well in karate though, and currently is the only one in his class (gold belt), so he's getting some great one-on-one attention with the instructors. He'll be moving up to orange belt in about another week, so we're enjoying the individual instruction while it lasts.

And mom is coming to visit this weekend! Yay! Which means I seriously need to clean the house. Boo!

Bragging

Whose son is a freakin' genius? MINE! Rugrat was accepted into the Gifted & Talented Program last week. Students have to score 98% or higher on the exam to get in, and my kid did it! Wooohooo! Classes are held once a week - at another school, dammit - and it should be interesting to see what he thinks of it.

Growing Up

Sometimes I forget that Rugrat is still just a little kid, and then all of the sudden he'll mispronounce something or use a word incorrectly. For instance, he was talking about something the other day and mentioned that it was made out of "concreek". "Concreek?" I asked. "Yes, like the backyard," he replied. "Oh, you mean concrete, as in 'our patio is made of concrete'." He insisted that the word was "concreeeeeek." He gets so offended when I correct him. It's as if I'm personally attacking his intelligence. Honestly, though, I'm just relieved to occasionally have a reminder that he's still young.

It's like his teeth. He's 7 1/2 now, and has only lost two bottom front teeth. None of the top ones are gone yet - they're barely even wiggly. Part of me longs for him to lose the top teeth and see how he's going to look with a full set of adult chompers...but the other part of me is so happy to just have my boy be a baby for a bit longer.

Crazy kid

Rugrat's teacher just called me. He just started back "on track" today, and she called me up, very concerned. She said that he'd told her this whole detailed story about his baby brother who'd died in a fire at home when Rugrat and I went to the grocery store. He had a name for the kid and everything! She said at first she thought he was just telling a story, and then he started to convince her that it was true because he had so many details...and then as she continued asking him questions about it, he started pausing more...and she realized that it was, after all, just a story. Then he said that it wasn't a baby brother, that it was a baby sister. Finally, he said that he'd heard the story from a friend.

WTF???

I assured her that all is well, that he doesn't have - and never has had - any siblings; that he lives with cousins half the time but none of them have DIED, fer chrissakes.

What a strange kid. On the plus side, that's an amazing imagination he's got.

The anti-fang

When Rugrat was about five months old, he got a tooth. One little bitty tooth, on the bottom. And that was it...he didn't get any more teeth for five months. We called him "Fang."

So on Saturday, he finally lost his first tooth. That one little bitty fang he sprouted when he was a baby. Most of the kids in his class are already growing in half a dozen adult teeth, but my little Rugrat held on to those itty bitty pearly whites for the loooongest time. And then Saturday, it was so loose - he'd been wiggling it all morning. I gave him an apple with his lunch, and halfway through his lunch it was obvious it was coming out really soon (because it was practically horizontal, barely hanging in there) so we went into the bathroom to wiggle it and monitor the progress. The quesadillas got cold, but we stayed in the bathroom, moving it back and forth until it was only held in place by a couple little bits of gum-flesh on the sides. Ewww, that's a gross visual. Anyway, I went upstairs to get the camera and WHILE I WAS GONE Rugrat pulled it out. Dammit. But anyway, it was done, and he was thrilled ("It didn't even hurt at all!"), and we put the tooth in a little box to stick under his pillow for the tooth fairy (who brought him a nice gold dollar coin for it). I took pictures of his gappy little-boy smile but every one I took had him squinting his eyes shut, so I don't think I'll post them here.

I gotta say, though, I don't think he's going to lose another tooth for five months. The one next to it is a little bit loose, but not so much that it's coming out anytime soon. And all the others are very firmly rooted in. Probably in six months or so he'll have a smile that's more "little old man without dentures" than "little boy with buckteeth." They'll all fall out at once, just like they all came in at once, five months after that first fang.

This first photo was taken during breakfast on Monday morning, at the Storyteller's Cafe in the Grand Californian hotel (where we stayed during this trip). Really nice hotel. Really bad food at this restaurant though.

Look how beautiful Sleeping Beauty's castle is! They repainted it and added lots of gold accents, including the five lovely crowns, representing the five decades of Disneyland. (This photo was taken during our Early Entry morning - the park wasn't always this deserted! LOL)


And here's the Haunted Mansion, all decked out in its Nightmare Before Christmas finery. I tried taking some flash-free photos inside but they didn't turn out well at all. :-( You really can't get a feel for how amazing it is without seeing all the fantastic changes they made inside. It was just incredible. My favorite part was the singing jack-o-lanterns.
